Spray it with cooking spray to keep the chicken from sticking during cooking. Put the tray on the medium setting. Arrange the marinated chicken pieces on the tray. Coat the breasts with olive oil. This prevents the chicken from drying.

Bake it for approximately 45 minutes in the oven. Make sure you do not over cook it. When it is done, it should be tender and moist. You should be able to cut into it with a spoon. Remove from the toaster oven. Voila! Your juicy tandoori chicken is ready.

For the salad, simply place 1/4 shredded green cabbage and red cabbage in a large container. Add 1/2 julienned yellow pepper and red pepper, 1/4 small red onion, chopped cilantro and roasted cashews. For the salad dressing, mix 1 teaspoon coconut milk with 1 teaspoon sesame oil. Add 2 teaspoon organic soy sauce, 1 teaspoon minced ginger and 2 teaspoon rice vinegar. In a large bowl toss the salad mix with the dressing ingredients. Add Dijon mustard in the end. Squeeze some lemon juice all over it. Serve with the tandoori chicken and enjoy your meal.

Paillard Chicken

Directions:

Cover the chicken with tomato and olive mixture. Add 1 small sliced fennel bulb and some more olive oil. Bake the chicken paillard for approximately 20 minutes until cooked through.

Next, sprinkle 1/4 cup basil leaves over the chicken. Serve immediately.
